Most of us have foods and flavors that are tied to traditions, family, and good memories.

So often, this is a resistance to eating well early in the journey.

But it doesn't have to be so!

My zucchini plants are generously giving us more zucchinis than we can possibly eat.  I am always happy to share with friends and family, but wanted to see if I could recreate my old zucchini bread recipe and still have it be delicious.

When I was first given this recipe from a friend, my kids were young.
This was back when we thought it was healthier to use egg whites rather than whole eggs, whole wheat flour instead of all purpose, and turbinado sugar instead of white sugar.

I had converted the recipe to gluten free about 15 years ago, and it was still delicious.  You couldn't even tell.
My kids loved it!
But when I went grain free a few years later, I stopped baking it.

So, I started experimenting.
Batch 1 tasted good but had a very strange texture.
Batch 2 wasn't much better.
For batch 3, I simply looked up a paleo recipe to try...the flavors were too different.
Batch 4 seemed promising!

My daughter (who is now an adult) stopped by just as batch 4 was cool enough to eat.
She tried it, skeptically.
And then she said, "tastes like childhood!"

SUCCESS!!!

I am not sharing this to pat myself on the back.
I want to inspire you to bring some of your favorite flavors back into your life.

Take Action

Think about what flavors or dishes you are missing.  Get creative and see if you can come up with a way to enjoy them again.  You might start by googling "AIP ____ recipe" as a starting point.  Even if the dish is nothing like the original, it may make you smile!
